We are planning to use the upcoming “Document Generation UI”. In the Document Generation- Field Mapping section, can the value be a Salesforce Object field so that record data can be automatically populated on to the templates similar to Docusign & Conga Sign. Can this feature of PDFtron replace CongaSign & Docusign ?

As you know the feature is still under development.
Yes, there will be a mapping feature that allows you to map any Salesforce object fields from the current record to your template fields, and you can populate data dynamically in the next iteration of our AppExchange app.
Using our SDK, you can replicate the features of apps you mentioned (DocuSign uses PDFTron SDK for example), but at the moment there is no timeline for this on our product roadmap (will bring this up to our product lead).
